CUTS OF PORK

Pigs are tender on top and thicker on the bottom. Their shoulders and hocks are juicy and there can be many ways to cook this oft-desired meat.

Pork shoulders got the name Boston Butts from the barrels New England butchers packed them into. This cut is best barbecued or consumed as pulled pork.

Lower parts of the pig’s shoulder are referred to as “Picnic Ham”. This robust and fatty cut is best braised or smoked to render it soft and chewable.

Spare-ribs make for a great serving with stew. The marinated and grilled sirloin or cured and processed rear leg of the ham are other popular options.
